Ingredients
3 cups vanilla wafer cookies (see note)
1 1/2 cups toasted pecans (see note)
1 cup powdered sugar
1/4 cup cocoa powder
2 Tbs light corn syrup
1/2 cup rum (see note)
coating of choice (see note)
melted chocolate, for dipping (optional)
Directions
- Place cookies and nuts in a food processor. Pulse to a crumb texture. In a large bowl, combine the cookie and nut mixture with powdered sugar, cocoa powder, light corn syrup and rum. Mix thoroughly. Form into 1-inch balls. Roll in coating. The rum balls can also be dipped in melted dark or white chocolate. Store in airtight containers in the refrigerator.
- Note: The flavors can be adjusted by using other cookies like ginger snaps, chocolate cookies or Biscoff cookies. Different liquor can also be used. Try bourbon, brandy, amaretto or any flavored liqueur as a substitute. Almonds, walnuts or hazelnuts are fine to use, too. The rum balls can be rolled in powdered sugar, sparkling sugar, ground freeze-dried raspberries, cocoa powder, shredded coconut or sprinkles.
